What to eat in Rome
Rome’s own dishes are a short list, and a good food tour gets through most of them. The four pastas are carbonara, cacio e pepe, amatriciana and gricia, all built on guanciale, pecorino romano or both. Supplì are fried rice balls with mozzarella in the middle. Pizza al taglio is sold by weight from long trays, and in the Ghetto the artichokes come deep-fried, alla giudia. Breakfast is a cornetto and a cappuccino at the bar, standing up, and a maritozzo, a bun split and filled with whipped cream, is the Roman version of a treat.
